Distillation Technician

Purpose of Job

The Distillation Technician is responsible for functions throughout the full lifecycle of production of spirits for Tennessee Distilling Group.  The Distillation Technician is responsible for ensuring that all stages of the productions meet the specifications of the customer’s specified order and produced according to company standards.

Job Duties and Responsibilities

As a function of processing grain through the cooking process, the Distillation Technician will be expected to perform the following:

  • Observe gauges and dials to prescribed temperatures according to mash procedure.
  • Observe steam and air valves
  • Control and monitor the fermentation of the mash used for distillation by testing the pH and gravity at prescribed intervals
  • Pump fermented mash to the beer well for distillation and operate pump to move mash.
  • Clean tanks, cooker, floors, bins, fermenters, etc.
  • Maintain and clean cooking areas of the warehouse
  • Controls stills that produce high-proof distillate
  • Maintain control of the still by pumping fermented mash through the still to strip out alcohol.
  • Pump spent mash into holding tank
  • Monitor and record temperature, pressure, flow rate and proof
  • Set controls on still to maintain temperature, proof, and flow rate
  • Record yield at the end of the run
  • Proof distillate down with water to be ready for barreling
  • Hand pour and measure enzymes with graduated cylinder
  • Weigh and measure yeast and yeast ex
  • Perform cleaning task as prescribed between and during each interval of the process as directed by the Distillation Manager
  • Unload grain trucks
  • Perform moisture and weight testing on grain
  • Collect grain samples
  • Monitor boiler and air compressor functions
  • Cross train in other departments to serve as back-up when needed
  • Other duties as assigned.

Requirements

Job Requirements and Qualifications

  • High School Diploma or GED
  • Bachelor of Science in Biology or Chemistry preferred
  • Experience in Column Still production is a must, pot still and single batch production experience will not be considered without column still experience
  • Experience in a production or manufacturing environment
